We really enjoyed seeing everyone this past weekend. Ben was quite impressed by our big, friendly family and Gwen got to chase around with cousins, a real treat for her. I wish there had been time to chat with everyone, and I am sorry I missed seeing some of you. Since in some cases it had been thirty or so years, I had to peek at name tags a lot!

While looking over the recipe books (thanks to Heather and those of you who took the time to put them together) I discovered my Mom's Spinach Casserole ingrediants but not the directions! For those of you interested, here follows the directions for the recipe. Maybe you can cut and paste into the book.

Thaw spinach in refridgerator overnight; or, run under hot water until thawed. Drain thoroughly, pressing out excess water.

Saute celery and onion in a samll amount of butter until onion is transparent and celery begins to soften.Brown pork sausage. In a medium bowl mix spinach, pork sausage, celery and onion, egg, and soup. Place mixture in greased casserole dish and sprinkle with the breadcrumbs; sprinkle the grated cheese on top.Bake in a 350 degree oven about 30 minutes.

Speaking of baking, we were about baked by the heat and were looking forward to getting back to the milder Colorado weather. When we landed in Denver, they announced that it was 90! That translates to baking hot in Canadian. It has also been really funny to hear Ben try to mimic the accent for his brother.
